Spicy-sweet and addicting with our Char Crust® Smoky Spicy Southwest Dry Rub Seasoning. We like these as a side dish to roast pork, with some buttery cornbread.
Ingredients (for 2 to 4 servings):
2 large sweet potatoes or yams
2 Tbsp. Char Crust® Smoky Spicy Southwest Dry Rub Seasoning
2 Tbsp. canola oil, plus a bit more to oil the bottom of pan
6 oz. concentrated orange juice, thawed
Preheat oven to 350°. Peel the sweet potatoes (blanching can make this job easier. Simply drop the potatoes in boiling water for a couple of minutes, remove from water, let cool, then peel). Then cut potatoes into long wedges.
Place potato wedges in bowl and pour orange juice over them. Toss to coat and let sit while you oil the bottom of a shallow roasting pan. Drain juice from potatoes, then drizzle oil over potatoes. Toss to coat the potatoes, then sprinkle with Char Crust® Smoky Spicy Southwest Dry Rub Seasoning, and toss again. Place potatoes in pan, preferably not touching each other, and roast for 45 minutes, or until tender.
