Ingredients
-
1 whole beef tenderloin (trimmed)
-
2–3 tbsp olive oil
-
Char Crust® Roasted Garlic Peppercorn
Instructions
-
Pat the beef dry with paper towels. Rub all over with olive oil.
-
Cover the tenderloin on all sides with Roasted Garlic Peppercorn. Press it in so it adheres and forms that signature crust.
-
Heat a heavy skillet (cast iron works best) over medium-high. Add a little oil.
Sear the tenderloin on all sides until deeply browned, about 2–3 minutes per side. -
Transfer the tenderloin to a roasting pan or keep it in the oven-safe skillet.
Roast at 400°F until the internal temperature reaches 135°F for medium-rare.
(This usually takes 20–30 minutes depending on thickness.) -
Remove from the oven and rest for 10–15 minutes before slicing. The crust helps keep the juices inside, so you’ll get tender, juicy slices.
