Salmon Burger with Rotisserie Roast

Ingredients: 

  • 1 1/4 lb Salmon

  • Char Crust® Rotisserie Roast

  • 1 Tbsp mayonaise

  • 2 Tbsp dijon mustard

  • 1 Tbsp lemon juice

  • 1 tsp lemon zest

  • 2 tsp capers

  • 1tsp cayenne

  • Onion, 1 slice

  • Lettuce

  • Tomato, 1 slice

  • Pretzel bun

  • Aioli or favorite sauce

  • Optional: 2 Tbsp of breadcrumbs

Instructions:

    1. Cut salmon into chunks and put into food processor. Add mustard, mayonnaise, lemon juice, lemon zest, capers and cayenne.

    2. Blend until consistency of ground meat. Optional: add breadcrumbs to mix if additional binding desired.

    3. Form salmon into a patty and heavily sprinkle with Char Crust® Roto Roast. Spray with oil.

    4. Heat cast iron pan over medium heat (or cook on grill)

    5. Cook patties 3-4 minutes, then flip. Cook another 3-4 minutes until done.

    6. Add toppings and place on pretzel bun.

Note: to simplify the recipe, use a salmon filet in place of a salmon patty.
