Ingredients:

1 1/4 lb Salmon

1 Tbsp mayonaise

2 Tbsp dijon mustard

1 Tbsp lemon juice
-
1 tsp lemon zest
-
2 tsp capers
-
1tsp cayenne
-
Onion, 1 slice
-
Lettuce
-
Tomato, 1 slice
-
Pretzel bun
-
Aioli or favorite sauce

Optional: 2 Tbsp of breadcrumbs
Instructions:

Cut salmon into chunks and put into food processor. Add mustard, mayonnaise, lemon juice, lemon zest, capers and cayenne.

Blend until consistency of ground meat. Optional: add breadcrumbs to mix if additional binding desired.

Form salmon into a patty and heavily sprinkle with Char Crust® Roto Roast. Spray with oil.

Heat cast iron pan over medium heat (or cook on grill)

Cook patties 3-4 minutes, then flip. Cook another 3-4 minutes until done.

Add toppings and place on pretzel bun.
Note: to simplify the recipe, use a salmon filet in place of a salmon patty.
