Chipotle Cauliflower & Black Bean Tacos

Ingredients:

  • Char Crust® Southwest Chipotle

  • 1 head of cauliflower cut up into small chunks

  • 1 can of black beans, heated up

  • Olive oil

  • Pickled cabbage soaked in vinegar salt/pepper

  •  Avocado

  • Sliced jalapeños 

  • 1 bunch cilantro

  • 1 cup sour cream

  • 2 limes 

  • 6 corn or flour tortilla

 

 

Instructions:

  1. Place cauliflower on a baking sheet. Coat cauliflower in Char Crust and drizzle with olive oil.  Toss well.  Roast at 475 degrees for about 15 to 20 minutes. Remove from the oven. 
  2. Make cilantro cream by blending 1 cup of sour cream with 1 bunch of cilantro, 1 tablespoon of lime juice and 1 ½ tsp of Southwest Char Crust.  
  3. Heat up tortillas, spread black beans on the bottom, top with cauliflower, cabbage, avocado, jalapeños, and cilantro cream.
